We base our teaching on a combination of classical and modern cooking through contemporary concepts in a technique-based approach. Recipes are important but mastering skills involve hands-on learning. Our graduates can walk into any kitchen and feel right at home with the training they have received.
Every student will experience every aspect of the program including the externship. The externship is the gateway for students into the professional food world. It could be a restaurant, a hotel, a farm, working with a food writer or a business similar to what the student wants to do after graduation.
